Squash Casserole Recipe



Yes! It freezes beautifully. Just hold off on adding the cracker and cheese topping until you are ready to bake. I also recommend thawing in the refrigerator overnight.



Ingredients
  • 2 tablespoons butter
  • 4 cups sliced yellow squash
  • 1 medium onion, chopped
  • 2 eggs
  • 1 cup grated cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 sleeve Ritz crackers
