This recipe is going to be a life saver for me this week. I have all the ingredients and had ‘cooking block’ with what to do with them. Craving mexican food this popped up in my instagram this morning and woohoo!
Ingredients
- 1 cup black beans with cooking liquid
- 1 garlic clove, minced
- 1 teaspoon chipotle chili powder
- 1/4 teaspoon sea salt
- 2 tablespoons lime juice
- 1 ripe avocado
- 2 tablespoons minced cilantro
- 1 tablespoon lime juice
- 4 whole wheat flour tortillas, 10 inches across
- Olive oil, for brushing
- 3 to 4 ounces shredded sharp cheddar
